History Panel shows us the steps I have done to this image.
Now I select History Brush tool. I stroke this brush with large diameter in soft round tip. I stroke it at the rug part of the image (yellow marker). This rug part is back to original state now. Because when we do not specify which step being use as restore point, Photoshop will restore it to the original image condition.

Now I set the source of History Brush at Desaturate step. We can set it by click on the small rectangle at left of each step.

When I stroke History Brush tool at the sofa part, the image on that part now back to black and white without noise and fragment distortion.
